sweet corn

Love sweet corn in the fall!  Above gently boiled hand shucked corn on the cob from Lone Pine Farms, seasoned with butter, feta, lime juice, cilantro, green onion, sea salt, pepper.  With your left over corn, you can also make this delicious corn salsa, shown below.  Cut the corn off 2 ears, Mix with one 15oz tin of black beans drained and finely chopped cilantro, 2 green onions, 1 jalapeño, 1/2 sweet red pepper, juice from one lime, drizzle of olive oil, drizzle of maple syrup, pinch of cumin, pinch of cinnamon, pinch of sea salt, pinch of black pepper.  Serve with corn chips or as a cold side.
