Vegan and Gluten Free Peanut Butter Cookies


I had to make these a couple of times before I found the perfect recipe for a soft and chewy, vegan and gluten free peanut butter cookie!  Adapted from a recipe found on this lovely blog.  The keys for me were to use Oat flour (I used rice flour the first time and they were chalky) and also to add the almond milk to make the dough the right consistency.  Recipe details you can find below.  I couldn't resist styling this shoot with a couple sprigs of apple blossom from my back yard, what a beautiful weekend it's been!  I served my cookies with cold almond milk.  Hope you enjoy the photos and recipe :)
