I can't believe how good this vegan "egg" salad was!! I found the recipe on this lovely blog. I didn't end up pulsing anything in the food processor as the directions suggested, I liked the consistency with just chopping and mixing by hand. I'd never tried black salt before, and it was such a delicious flavoring for the "egg" salad. This dish is vegan and gluten free as long as you make your sandwiches with gluten free bread. I've been munching on these sandwiches all weekend!
